Bar-B-Que Bob Smokin' for Super Bowl Sunday

NORTH SALEM, N.Y. -- Drop in to Kinglsey’s Deli on June Road and bring home some authentic barbecue for Sunday’s Super Bowl, prepared by North Salem’s Bob Soto, aka Bar-B-Que Bob.

Soto has been taking his mobile smoker to Outhouse and now Harvest Moon for years. He has lived in North Salem since fourth grade and has been a dedicated cook for almost as long. At 14, he started his restaurant career at Johnson’s, the forerunner of 121.

“I worked my way up from dishwasher to cook,” Soto said. “I took food prep classes in high school. It was just a passion.”

Soto has been supplying restaurants, catering parties and special events for the last five years. All of his business comes from word-of-mouth.

“I started out with a small smoker and ended up spending thousands of dollars on smokers,” Soto said.

Among his specialties are the Texas lollipop, sausage wrapped in bacon, and the triple play, a small pork tenderloin, stuffed with sausage, wrapped in bacon and finished with a wet rub. It smokes for six or eight hours. His burnt ends, based on brisket, cooks altogether for 18 or 20 hours. At the end it is cubed and served.

“They are the tastiest little cubes -- crispy, seasoned and tender,” Soto said.

Soto added that when something is properly barbecued, you get a smoke ring within the meat.

“That’s how you know it’s authentic. It’s a rich red ring. You even see it in ribs,” Soto said. He also smokes chicken, turkey, kielbasa and pork butts for pulled pork.

His menu for Super Bowl Sunday will include ribs, brisket, chicken and pulled pork. You can order ahead or just stop by and pick up what you want. Kingsley’s will be open on Friday and Saturday from 5 a.m. to 9 p.m. and on Super Bowl Sunday from 6 a.m. to 7 p.m. Kinglsey’s phone number is 914-669-5324.

If you are planning a big party, Bar-B-Que Bob will roast you a whole pig. Last winter he did one right in the middle of Peach Lake.

“The guy had a couple of hundred friends there,” Soto said. “It was a happy success but when it comes to roasting a pig in the middle of a lake -- there is a learning curve.”
